Spaghetti Squash Mac N Cheese

In my attempt to be a little healthier, I've been seriously missing mac n cheese.

Who wouldn't?

So when a friend was telling me how awesome spaghetti squash was (I'd never had it) I decided to whip up some mac cheese spaghetti squash style.

Here's what I used (mainly because this is what I had in the fridge):

Spaghetti Squash

lump crab meat

Broccoli

shredded cheddar cheese

green onions

First up is baking the spaghetti squash. I set the oven to 375 and had the boyfriend help me by cutting several slits into the squash.




You could use a fork instead of a knife. Then I baked it for an hour.

When it was finished, I pulled it out to cool and set it aside.

While I waited, I steamed the broccoli and cut up the green onions.



By then the squash was cooled, so I sliced it in half (or the boyfriend did) and scooped out all the seeds.

Then I used a fork to scrape the flesh of the spaghetti squash. As a result I got stringy noodles. (I forgot to take a picture, but it looked something like this).

Then I threw everything into a bowl together and mixed it all up.


And then ate it up. 


In front of the TV as we do in my apartment.


It was good :)

A quicker way to cook spaghetti squash: cut in half, wrap each half in plastic wrap, and microwave each half for about 5-10 mins (depending on size of the squash and the power of the microwave). You could nuke the two halves at the same time, but I've never done this so I don't know how that affects the timing.
